One of my favorite breakfast foods is almond flour pancakes. They are absolutely delicious and have a great texture. Almonds themselves are a healthy food but have been hardened by the milling process used to make flour. This makes them crunchy on the outside but also soft on the inside. The natural gluten from the almonds makes a delicious base for any recipe and the healthy fats also keep you full for many hours.
When you cook with almond flour, your main concern will be the ingredients. In order to make good almond flour pancakes, you need to use high quality flour. All-wheat flour or pastry flour is fine but feel free to use other whole grains that you enjoy. It doesn’t really matter what you use as long as it is all-purpose flour. Most of your recipes will call for wheat flour so feel free to substitute for that in order to maintain consistency. If you can’t afford to go through the trouble of going to the grocery or health food store, there are several ways you can get your daily protein and fiber.
My favorite almond flour pancakes are made with almond extract. I love the nutty flavor but feel free to add a few drops of your favorite flavor to the batter if you want a different flavor. There are many different varieties of almonds that you can buy at your local health food store or online. You can find them in dark, pale, and even sesame varieties. There are also ones that have no flavor at all, like the basic almond.
First, you will need two eggs and a half a cup of water. Any healthier substitute is just fine but for the flavor boost, you can also use three eggs. Put the milk into your mixer and start beating the egg whites until they begin to form bubbles. When the whites are finished beating, you will then add the 2 eggs and one cup of water and start beating again.
Next, you will need a half a cup of either sugar-free syrup or regular sugar and a half a cup of packed light or dark brown sugar. Once you have all of your ingredients combined, simply pour the batter into your baking pan and cook on the top of the stove until the bottom is set. You should not be changing the temperature within ten minutes or you will risk burning your food.
Now, you will want to start mixing the batter. Take a tablespoon or so of both brown sugar and cinnamon powder and mix together. Once mixed, you will then take your second bowl and put a half cup of either unsweetened or semisweet chocolate chips in it and mix together with the cinnamon and brown sugar. Once mixed, you will spoon this mixture into your baked bread bowl. Next, you will want to spoon a third of a cup of either packed light or dark brown sugar into your measuring cup and mix together with the almond flour. Once mixed, you will spoon this mixture into your molds, which can be food coloring agents in candy colors like green, red, purple and orange.
Once you have your mold made, you will then add your wet ingredients to the dry ingredients and mix together using a fork. Once you have done that, you can then drop your cakes in and run a wooden or metal spoon through the ingredients to mix them together. Once that is done, you can then run a wooden or metal spoon through the dry ingredients to mix them together. Once you have done that, you will then spoon your batter into your pans and bake your cakes as you normally would.
One of the nice things about making almond flour pancakes is that you do not have to go to work and it is so quick to make. If you feel like it, you can even make them for breakfast instead. This means that you can fill up on them before you eat your normal meal so you will still have your calories and the almond butter will be left over which is perfect to use for other recipes or just snack on by itself.
